All instruments Haram?

I'm a moslima living in holland and there whe must learn at school how to play piano and other istruments,

I have read that all the istruments are haram exept the daff,
But why is this so?

It is haram as you mentioned to use all musical instruments except the
duff, that's because the prophet forbad us from using them and allowed us to use the duff, one of the reasons that the scholars say it because it changes the heart and the mind of a person.

And Allah knows better
